Time to get Cooking! Smoking is a time honored method for preparing meats and a host of other foods. learn from chef scott mcfarland how to smoke and cook a variety of wild game.

Chef Scott McFarland, Director of Dining Services at Conserve School in Land O’ Lakes, will join us in the LOLA kitchen for this interesting class in smoking wild game. A variety of meats will be on hand: Wild Duck, Alaskan Halibut, Elk, Buffalo and Pork. Scott will discuss methods, tools, techniques & woods, all while his smoker is working outside, enticing us with delicious smells. He will also discuss rubs and to toast or not to toast spices, making mopping sauces and other foods for smoking, such as cheese!
Recipes will be provided along with tastings of all the meats, cheese and other surprises from the smoker.
“I started cooking at the age of 16 simply as a means to make money. After a few years of cooking I decided to pursue it as a career, I seemed to have a knack for it!! By the time I was 22 I was an Executive Chef for a high end country club. I spent the next 12 years as an Executive Chef in private clubs in the Milwaukee/Chicago area. I left the private club business to become the Executive Chef at the Heidel House in Green Lake, WI. Over the years I had competed in several culinary competitions through the American Culinary Federation bringing back bronze, silver and gold medals. During these years I was also a Personal Chef for Wisconsin & Southern Railroad (in my spare time!!). We traveled the rails in antique private cars being pulled by steam engines and first generation diesel engines feeding guests, clients, family and friends. My favorite car that I cooked on is currently at a railroad museum in Green Bay. After a few years at the Heidel House I joined a contract company called Sodexo. As a District Chef for Sodexo I had approximately 12 accounts that I would work with and help out on occasion. Conserve School was one of the Sodexo accounts that I had the honor of assisting. After my second trip up I decided that if the current manager ever left I would throw my hat in the ring to see if I could run the dining services program. The manager left about 5 years ago and I have been here ever since. I enjoy the outdoors specifically hunting and fishing, I am a certified archery instructor and work with the students at Conserve School to help hone their archery skills. I have always had a passion for smoked foods and cured foods. I enjoy sharing my knowledge and abilities to smoke foods with others, and of course eating the finished product!!” Chef, Scott McFarland
