Chef mike mcadams is back in the lola kitchen! as a follow up to his stocks class – learn the “mother sauces” and the basics of sauce making for bringing your taste buds to a whole new level.

In the culinary arts, the term “mother sauce” refers to any one of four basic sauces, which are the starting points for making various secondary sauces or “small sauces.” They’re called mother sauces because each one is like the head of its own unique family. Bechamel, Veloute, Espagnole and Hollandaise will be the featured sauces. Mayonnaise, Zabaglione (Sabayon), Creamy Caramel Sauce and Crème Anglaise will also be discussed.
A sauce is essentially a liquid plus some sort of thickening agent along with other flavoring ingredients. Each of the four mother sauces is made with a different liquid, and a different thickening agent— although three of the mother sauces are thickened with a roux, in each case the roux is cooked for a different amount of time to produce a lighter or darker color.
From white – to brown sauces and everything in between, Chef will take the mystery out of sauce making and we will learn why everything tastes better with sauce! Tastings and recipes will be shared.
Mike is retired and was Chef/owner of Michael’s Restaurant in Sycamore, IL. Classically trained in the French techniques, Mike has taught many cooking classes for LOLA. He is now on the Board of Directors and will help in caring for the LOLA building. He lives in Land O’ Lakes with this wife, Margaret Baack, who is a fiber artist.
