Cajun cooking originated in south Louisiana a couple of centuries ago when the French-Acadians (known today by many as “Cajuns” first settled this land after being exiled from what is now known as Nova Scotia). 

 

In the years since Cajun cooking has been developed into something of an art form in the kitchens of South Louisiana-specifically in the 22 parish region called Acadia or “Cajun Country”

 

Get ready for a night in the Big Easy. Learn classic Acadian Recipes at the hands of an authentic Cajun ex-pat. Recipes that have been passed down from her mama to you will be featured in today’s class. Learn the secrets of this flavorful American cuisine and master new dishes that will amaze your family and friends. Learn to make and enjoy the following menu:

About Chef Arlene Coco Buscombe

Teaching cooking classes is my passion, and I have been featured on television in Duluth, offering recipes that are inspired by nature’s bounty. I am the author of Cajun Cooking, Making it Easy (Wordware press 1997).

I am a certified culinary professional who has worked in the culinary world as a chef and caterer for over three decades. My vast experience has taken me to over 19 countries where I have traveled and studied the food ways of numerous cuisines. I have a portfolio career in the food world and I never stop learning new techniques to teach my students. 

I have been a restaurant owner/chef, micro food manufacturer and currently, a full-time culinary instructor. I have also been the past president of the Minnesota chapter of Les Dames d’ Escoffier, past board member of the Arrowhead Professional Chefs Association, a member of the Minnesota State Department of Health Advisory Committee, and a member of Women Who Really Cook.
